The offer of Jaroňkova pekárna naturally includes Štramberk Ears, at present even more famous since they are an EU registered trademark.
In her publication called “Co se dříve jedlo pod štramberskou Trúbou” PhDr. Anna Hrčková says: “Originally, they (Štramberk Ears) were made of bread (rye) flour sold by bakers. After their trade was cancelled the flour was no longer available and that is why also the recipe had to be changed – rye flour has been replaced by wheat flour. According to experience and expert opinion it is the quality of the flour which decides. The secret of their taste lies in the unique use of their individual ingredients.” Therefore, each family guarded their “guaranteed recipe” for Štramberk Ears. One of them is presented also in the above-mentioned publication:
Blend 20 dkg of powder sugar with three eggs then beat the mixture with 10 dkg of warm melted honey. Add 50 dkg of smooth flour and ground spices: 1 flat teaspoon of badian, the same quantity of cinnamon, half a teaspoon of anise, lemon peel, and knead into a dough. Let the dough sit overnight and on the following day roll it out into a sheet. Then cut out circles, place them on a baking tray and bake them in the oven. Roll them into cornets while they are still hot, and put them either in a metal ear mould or in glasses.

Štramberk Wafers
In addition to freshly baked rolls and Štramberk Ears the café also offers new Štramberk wafers. The times when the romantic little town of Štramberk saw crowds of “spa dandies” have already passed. The once noted climatic and herbal spa of Štramberk was established by the herbalist and homeopath Jan Bajer in 1855. Although spa “dips” nowadays remain merely a memory the spa wafers and loving care provided to Štramberk visitors in the Relax in the Beskydy Foothills centres can be enjoyed even today!
